Wilting the spinach first is not fussiness: raw spinach folded into eggs releases water as it cooks and the wrap goes soggy. Give it a minute in the pan alone, let the liquid cook off, then add the eggs. Low heat and pull them early, because they keep cooking inside the wrap.
Feta is salty, so do not salt the eggs. The hot sauce is doing two jobs, flavour and moisture, which is why there is no butter or mayo in the list. If you like it milder, a spoon of Greek yogurt in the wrap does the same job.
This is the one breakfast that prefers to be made fresh, but it can be prepped: cook the eggs and spinach the night before, keep them in a box, and assemble in the morning with the feta. Warming the wrap for ten seconds in the pan makes it roll without cracking. At 27 g it is the lowest-protein breakfast here; add a fourth egg white or a slice of turkey if your morning target is higher.
