Honesty first: at 18 g this is the lowest-protein recipe of the fifteen. It is here because it is the lunch people actually pack, and because it pairs well with a higher-protein dinner or a shake. If you need it to pull more weight, a second can of chickpeas or a tin of tuna folded through takes it into the thirties.
The onion soak is the step people skip and regret. Raw red onion straight into the bowl dominates everything; five minutes in the lemon juice softens it and seasons the juice at the same time, which then becomes the dressing. Dice everything the same size so each spoonful has a bit of all of it.
For meal prep this is close to ideal. Make it on Sunday, keep the feta separate, and it holds four days in the fridge with the flavour improving. The cucumber gives off a little water by day three; drain it before eating rather than adding more oil.
