Two things decide whether these work. First, the batter really does need to rest: blended oats keep absorbing liquid for a few minutes, and a rested batter holds together on the flip instead of tearing. Second, keep them small, about the size of your palm. Big cottage cheese pancakes are hard to turn because the batter is softer than a flour one.
Medium heat, not high. The outside browns before the middle sets if the pan is too hot, and the middle of a cottage cheese pancake is what you are after. When the bubbles on the surface stay open instead of closing over, flip once and give it another minute.
For meal prep, cook the full batch, cool them flat on a rack and stack with baking paper between. They reheat in a toaster or a dry pan and keep three days in the fridge. The banana and maple are the sweet part; if you want fewer carbs, serve with berries instead and keep the cinnamon.
