The timing is the recipe. Peppers and onion need about fifteen minutes at 220C to soften and char at the edges; shrimp need five, and at ten they are rubber. So the vegetables go in alone, and the shrimp join for the last five. Toss the shrimp in the spice while you wait so it sticks.
Buy shrimp raw and peeled, and if frozen, thaw and pat them properly dry before the spice goes on. Wet shrimp steam on the tray instead of roasting and the spice slides off. Cut the peppers into strips the same width so they cook evenly and fit the tortilla.
Three portions, and this one reheats better than most seafood because it is quick: a hot pan for a minute rather than the microwave. The tortillas are the carb on the card; two small ones per portion is how it is counted. Swap them for rice or lettuce and the protein does not change. Lime at the end, not before the oven, or the juice cooks off.
