Skin side down first, and leave it alone. Four minutes without moving it is what gives you a crisp skin that releases from the pan by itself; poke it early and it tears. Two minutes on the flesh side is enough for a medium centre. Then take the pan off the heat before the glaze goes in: miso and honey burn fast on a hot surface.
The noodles cook in the same pan with the glaze that is left, which is where the flavour goes. Fresh egg noodles need a splash of water and two minutes; dried ones should be boiled first or they drink the sauce. Pak choi goes in whole leaves at the last minute so the stems keep a bite.
This is not a great one to reheat because the salmon overcooks, so if you are prepping it, cook the glaze and noodles ahead and pan the fish the night you eat it. It is the highest-calorie recipe here; halving the noodles brings it to a lighter plate without touching the protein.
